When I create a new deal a standard value of $100 dollars is added, is there somewhere where I can change this ammount or turn off that it is added?

Unfortunately you can’t change the default value of $100. It can only be adjusted in the actual deal (see video):
However, you can set a default currency in the pipeline options.

Would be great if that standard amount could be edited, some of my customers have deal sizes which are much larger than $100.

I think your best bet would be to submit this idea to our product team so they can take it into consideration when making updates to the platform.
