Does the contact need to login (every time) at my site so that his behaviour (show interest in one particular product, abandon cart) is tracked?

Nope! The contact will be cookied, so the next session, even if they are logged out of your site, will record to site tracking.
This behavior does depend on cookies, so the previous statement won’t hold true if the contact has cookies turned off.
